Any fruit that has been dehydrated (dried) in order to create bigger the shelf life and to think the flavour or sweetness. Some fruits are dried and processed with chemicals to extend their shelf life, such as apricots that have sulphur added in order to decrease oxidation and maintain their bright coloured look. Unsecured apricots show a brown tone rather than the bright orange to yellow colouring of sulfured apricots. Dried fruits are normally used.
