A shrubby perennial plant in the genus Salvia of the mint family (Limiaceae). There are several species, including garden, or true, sage (S. officinalis), the sage most commonly used in foods. Many varieties of garden sage are known, but the Dalmatian type possesses the finest aroma. Mediterranean, or Greek, sage (S. fructicosa) is also used in foods, but is of inferior quality. Clary sage (S. sclarea) and Spanish sage (S. lavandulifolia) are used in perfumes and cosmetics.
