Bruder basil

Modern, creamery, semi-soft German cheese of flattened shape with convex sides. The natural rind is dark mahogany in colour and is waxed. The cheese is smooth, firm, yellow with small holes. The taste is creamy, smoky, but can be rather "plastic". This cheese ripens in one month and has a fat content of about 45 per cent. Bruder is used for grilling and also for snacks and sandwiches, often served with wine.
