Clostridium botulinum

Species of pathogenic bacteria found in some fish, mud and marine sediments. These anaerobic spore-forming bacilli grow only in the absence of oxygen and produce one or more of a series of similar neurotoxins which are readily destroyed by cooking (70°C for 2 minutes), but the spores of the organism are quite heat resistant.
