Crowley

Crowley is a cylindrical or oblong American cheese in various sizes. It is one of the semi-soft cheeses made from cow's milk. It is made by washing the freshly cut curd with cool spring water to remove much of the acidic whey. The curd is then salted, packed to allow the small holes to develop and placed in wooden presses for at least three to six months. After six months, the cheese has a an onion tang and after twelve months it is "extra sharp" and best-seller.
