This cheese is made only in the Doubs region of France. It can only be eaten in the autumn as the milk comes from summer grazing. This cheese has a round shape and the period of ripening is about three to four weeks. Its pâte is soft and supple and the rind is washed regularly with whey which gives the cheese a delicate taste of infinite softness
