Unpasteurized, fresh cheese named for its fig shape. During the affinage that takes for at least two weeks, this cheese is squeezed, and moulded in a cloth. It is mild and pure with a lemony acidity and it is normally dusted with salt and ash, paprika or herbs. Its fat content is about 45 per cent.
