This cheese was invented in the 1970's by a creamery in Seine-et-Marne, France. The meaning of the cheese is gratte (scratch) and paille (straw). It is a soft-white cheese of brick shape with natural white rind. Gratte-Paille is creamy cheese with oily texture and mushroom flavour which sharpens with age. This kind of cheese is used for cooking, for baking in pastries with chicken and vegetables. The cheese has a fat content of 70 per cent.
