Gubbeen is an Irish vegetarian, semi-soft, table cheese. The terracotta brine-washed rind has fine, white and pale blue moulds. The taste of this dense, full-bodied cheese is rich and savory. It is excellent with burnt onions and grilled cheese. Gubbeen's gentle flavours reflect the great care taken by Tom and Gina Ferguson. Their cheese twice won silver medals at the British Cheese Award.
