Le Brin comes from France, Savoie and is known as a milder version of the traditional French washed-rind cheeses. It is a semi-soft, creamery, vegetarian cheese made from cow's milk. It is made by the ultrafiltration method rather than by using rennet to separate the curd from the whey. The cheese is very smooth and has a sweet aroma and taste. Le Brin has hexagonal shape with reddish-orange rind dusted with white penicillium mould.
