Cheese of various shapes and sizes made from cow's milk. With age the rind changes its colour from pale straw to golden yellow. This is a favourite Italian cheese and it simply means "pressed". This is a name for cheeses made from skimmed or semi-skimmed milk. They are sold young, when they have a sweet-sour and milky taste.
