Sancerre, like Crezancy and Santranges, is a variant of Crottin de Chavignol with a distinctive taste. It is a natural-rind cheese made from goat's milk. There are two varieties of the cheese depending on a period of maturation. Young Sancerre has a fresh "white wine" fruitiness. When aged, it has a strong, nutty, goaty taste. Sancerre is a table cheese and often is added to salads.
