Woodside Cabecou is an Australian cheese that comes from Adelaide region. The cheese is ivory-white, soft and mousse-like when young, with a fresh acidity. Woodside Cabecou is made from goat's milk and was created by Paula Jenkins. With age, the cheese hardens, the herbaceous, mushroomy flavour and aroma become more obvious and some grey mould may appear. The thin, natural crust is yellowish and wrinkled. The fat content is 45%.
