Ageing

There are two different types of aging: Wood ageing is the process of maturing wines or spirits in wood casks or barrels prior to bottling. The resulting flavours and aromas of wood ageing depend on the kinds of barrels used, and how they may have been used before. Bottle ageing is a plus in ageing wines and ports, but does little to nothing at all to improve spirits.
