An experimental procedure used in the sensory evaluation of foods. The assessor describes the flavour of a product typically using descriptors from a prepared list of terms, though some systems - free choice flavour profiling - allow each assessor in a panel to use their own descriptors. The assessor also rates the perceived intensity of each flavour 'note' identified.
