This cheese is produced in a small Corsian village of Casamaccioli in France by the Santini brothers. It usually has a square shape with washed rind, marked by colander. The cheese is typical for its strong smell and quite sticky consistency. This cheese ripens for three months and has a fat content of 50 per cent. It tastes good with a glass of white wine.
