Vegetarian, hard cheese of round shape made from cow's milk. This cheese has been produced by Mark Robertson since 1987, according to European washed curd recipe. It is moist, firm cheese and has a sweet, fruity flavor. It ripens in the old, stone cellars for a period of ten weeks and has a fat content of 50 - 55 per cent. The cheese has a natural rind dusted with greyish mould.
