Sharpam is an English cheese that comes from Devon region. It ranks among vegetarian cheeses and is made from cow's milk. Sharpam is similar to Brie and is hand-ladled into moulds to retain the soft feel of the smooth Jersey milk, which is so thick that it feels like clotted cream. Tha affinage takes six to eight weeks and the fat content is 45%.
