Taupiniere

This French, natural-rind cheese is made from goat's milk and has a similar shape as Gaperon, which is a dome. The cheese is produced by M. Jousseaume at his farm at St. Estephe. The name of the cheese means "molehill". During the two week period of affinage, the cheese absorbs natural mould in the cellar, which gives the cheese nutty flavour with a lemony tang.
