USDA quality grade

A grade given to beef based mainly on the marbling and maturity of the meat and its appeal to the pallet. Prime is the highest, followed by choice, select, standard, commercial and utility, cutter and canner. The marbling is determined by inspecting the rib-eye in between the 12th and 13th rib, while maturity is determined by assessing the bones and cartilage.
