There are formal chemical definitions of oxidation, involving electron transfer and free radicle reactions but, in the context of fish technology, it can be considered as the chemical reaction in which oxygen combines with a compound. Most usually, the oxygen comes from air surrounding the product but, for some reactions, the oxygen can come from oxygen-containing compounds.
