Traditional, creamery, hard cheese made from cow's milk. It has a shape of truncated cone. The cheese is pale green and rindless. Sapsago owes its unusual, pale green colour to the addition of fenugreek. Very hard and gritty, it melts like Parmesan when heated. It is salty, sour and mouthwatering. Sap Sago is not an eating cheese but is good as a food topping and in cooking. It is also known as Schabziger.
